I made this recipe for some friends tonight and they really enjoyed it. this is what I did.
Ingredients:
- 1 & 1/2 lbs chopped rhubarb
- 1 & 1/2 lbs of fresh strawberries hulled and quartered
- 1 ripe banana cut into small pieces
- 2 teaspoons orange zest
- 1/2 large orange, juiced
- 1 teaspoon powdered Stevia
- 2 Tablespoons Whole Wheat Pastry Flour
For the topping I used :
- 1 1/2 cups of granola that I made a few weeks ago.
- I added 2 Tablespoons Earth Balance
- 1/2 cup brown sugar
- 1/2 of a large orange juiced
- 3/4 cup all purpose flour
- 3/4 cup rolled oats
- 1/2 cup brown sugar
- 2 Tablespoons Earth Balance
- 1/2 large orange, juiced
- Preheat oven to 375 degrees.
- Mix together all of the items listed in the ingredients and press down in a 13" by 9" glass pan that has been sprayed.
- Mix granola mixture or the topping together.
- .Sprinkle the topping over the fruit.
- Bake about 40 minutes. The fruit should be bubbly and the topping golden.
This is really good, give it a try.
