Raw Lasagna

Cleansing your body in the winter requires a different strategy than when the weather is warm.  You can have some raw foods, fresh juices, and green smoothies, but you also need some warming foods.  Include garlic and ginger in your juices and other recipes.  Drink herbal tea.  Gently warm vegan soups, keeping the temperature low.  You can also make delicious dehydrated foods.  The following recipe is one of the most outstanding lasagnas I’ve ever had.  It’s especially good when it’s warmed in the dehydrator.    
Recipe of the Week
Chef Stevie’s Fabulous Raw Lasagna

This is the dish we serve Sunday night at our juice and raw foods cleanse retreats.  It’s one of our most popular entrees.  ..

Cashew Ricotta
2 cups raw cashews soaked for 2 hours
2 tablespoons lemon juice
2 tablespoons nutritional yeast
1 teaspoon truffle oil (can substitute olive oil)
1 teaspoon sea salt
3 tablespoons water

Blend all ingredients in the VitaMix or food processor until creamy.

Basil Pesto
2 cups basil leaves
1 clove of garlic
1/4 cup olive oil
1/2 cup walnuts, pine nuts, or cashews
2 tablespoons lemon juice
Sea salt and pepper to taste

Blend all ingredients in the VitaMix or food processor.

Lasagna "Noodles"
2 zucchini

Use a mandolin to thinly slice 2 zucchini for lasagna noodles. Place 3 zucchini noodles one slightly overlapping the other on a dehydrator sheet. Then spread 1 Tbsp. of the “ricotta cheese” over the noodles.  Next spread about 1 Tbsp. of the pesto sauce over the cheese. Place 3 additional zucchini noodles on top of pesto.  Spread a layer of cheese on top, then a layer of pesto and top with fresh tomatoes. Dehydrate* for at least an hour at 115 degrees.  If you want a warmer dish, dehydrate for about 3 hours.  Keep in dehydrator until ready to serve.
