Ingredients:
- 1 sweet potato with peel on, sliced very thin
- Put sliced sweet potato in plastic bag with a tablespoon or so of EVOO. Go easy.
- Add a little onion powder, garlic powder, Mrs. Dashes Southwest Chipolte Seasoning and a dash of black pepper.
- Shake the bag really well and put on a parchment lined baking sheet.
- Bake at 425 degrees until tender 20-25 minutes
- Turn on the broiler and broil until golden brown. Flip and do the other side of sweet potatoes.
- Sprinkle with cheese of choice, put back under the broiler until cheese is melted.
- Serve immediately.
