Ingredients:
- 2-3 medium zucchini
- 4-6 tomatoes
Seasonings of choice - 2 slices high fiber bread-torn in smaller pieces.
- I lightly sprayed 8"square pan
- Slice ends off washed, unpeeled zucchini.
- Slice tomatoes in 1/4" rounds.
- Alternate rows of zucchini and tomatoes.
- I seasoned with garlic and onion powder. Also Italian Seasonings and pepper . I just sprinkled the seasonings over the vegetables.
- Put bread in a food processor and process until consistency wanted. I added about 1/2 Tablespoon of EVOO. and continue processing until well blended.
- Sprinkle crumbs over the vegetables.
- Bake at 425 degrees about 35 minutes or until crisp tender.
