Dressing:
- 2 teaspoons Dijon Mustard
- 1 teaspoon dried tarragon or 2 teaspoons fresh-chopped
- 1 tablespoon honey
- 2 teaspoons olive oil
- 1 Tablespoon plain fat-free yogurt
- 1 cup sliced fresh strawberries
- 1 ripe kiwi, peeled and sliced into thin strips-I use 3
- 2 cups finely chopped cabbage
- 1/2 cup fresh chopped cilantro
- In small bowl, combine all the dressing ingredients.
- Mix and toss fruits, cabbage and cilantro.
- Divide amongst 4 salad plates.
- Divide the dressing among the 4 plates
- Makes 4 servings.
