Coronation Salad





This is a really close up of the Salad from the night before at a friens home.



This is really good. I love to serve the salad in small romaine lettuce leaves.

Ingredients:


  • 1 red bell pepper-de-seeded and diced


  • 1/2 cup raisins


  • 2 celery stalks-diced


  • 1 large apple-diced


  • 1 cup grapes-cut in half


  • 1/2 -3/4 cups walnuts chopped lightly


  • 1 1/2 brown basmati rice-do not add any more than that.
    small heads of romaine lettuce-washed and dried

Dressing:


  • 5 Tablespoons vegan mayonnaise


  • 2 teaspoons curry powder


  • 1 teaspoon lemon juice plus a few drops


  • 1 teaspoon paprika


  • pinch of salt-optional


  • freshly ground black pepper
    Directions:

Make the dressing and set aside


  • Mix all the rest of the ingredients (not romaine lettuce) together.


  • Pour dressing over the ingredients and mix well.


  • Refrigerate for a few hours to marinade the flavors.

To Serve:



  • Put salad in romaine lettuce leaves.


  • Sprinkle with paprika.


Enjoy!! this is my new favorite salad. (At least for this week)

Banana Muffins




These are really great. We had them at the potluck last week in form of Banana Bread. With a few changes I made the recipe into muffins. They are very moist and tasty.




PREHEAT oven to 350 degrees


Bake-25-30 minutes, or until toothpick inserted in center comes out clean.


Allow to cool 10 minutes before removing from pan.


Ingredients:




  • 1 cup Whole Wheat Pastry Flour


  • 1 cup Whole Wheat Flour


  • 1 teaspoon baking soda


  • 1/2 teaspoon salt


Combine and set aside.


In a large bowl, combine with mixer:




  • 1/2 cup maple syrup


  • 1 1/2 cup mashed bananas


  • 1/2 cup unsweetened applesauce


  • 1/4 cup powder soy milk


  • 1 Tablespoon ground flaxseed


  • Add flour mixture-do not over mix as muffins will get tough.


  • Add 3/4 cups nuts


  • 1/2-3/4 vegan chocolate chips-optional.




I put these in a muffin tin that was made for the small muffins. I used the scoop (on picture)


to fill the muffin tin.




these freeze wonderfully in a freezer bag.

Cajun Chickpea Cakes

These are so very good. I loved the size of them. They where served at our potluck last evening with my Tofu Dip.
They are a Vegan Dad Recipe.


Ingredients:



  • 1 Tablespoon olive oil

  • 1/4 cup diced onion

  • 1/4 cup diced green pepper

  • 1 celery stalk diced

  • 1 15 oz chickpeas rinsed and drained

  • 1 teaspoon thyme

  • pepper to taste

  • pinch of cayenne pepper

  • 1 teaspoon paprika

  • 1 teaspoon hot sauce

  • 2 Tablespoon fresh parsley

  • 2 Teaspoons Whole Wheat Flour

  • 1 Tablespoons cornstarch


Directions:



  1. Place chickpeas in a food processor along with the onion, green pepper, celery mixture.

  2. Pulse until chickpeas are no longer whole. Do not over process.

  3. Place in bowl. Add remaining ingredients and mix well. (not the oil)

  4. Place mixture in the fridge for at least 30 minutes.

  5. Bake into small patties and fry in a sprayed, hot pan until browned and crispy. About 2-3 minutes on each side.

Serve with Verna's Tofu Dip using your favorite spices.


Tofu Dip



  • 1 pkg silk tofu, soft, drained

  • 1 cup Grapeseed Oil Vegenaise - this is the jar with the purple cover

  • 3 teaspoons fresh lemon juice

Directions:


Mix very well in a food processor.


  • Add 1/2 teaspoon each of garlic an onion powder.


  • 1 1/4 teaspoon paprika


  • a couple squirts of Sriarcha Sauce


  • 2-3 chopped green onions


  • and whatever else you like


  • This would be great with chopped fresh dill in it.

Another Graduation-CHIP Class-2/23/12




























Wow !! Class 22 in CHIP just graduated. We had 42 people in class.

Every group we have had is wonderful, but this was a really cool class.

21 of the students where from the Kimberly School District. I so hated to see the classes come to an end. All of the people where just wonderful!!!!


Our next CHIP Class will be held at the Kimberly School District-District Administration Building.

Red Peppers on Sale

Yes, red peppers are on sale again at Woodman's.

They are big beautiful peppers, and 2 peppers for $1.00.
If you didn't get a chance to get some last week, now is your chance. They are great for roasting and freezing for later use.

Zucchini Tomato Bake

This is really tasty and very easy.
Ingredients:


  • 2-3 medium zucchini

  • 4-6 tomatoes
    Seasonings of choice

  • 2 slices high fiber bread-torn in smaller pieces.
Directions:


  1. I lightly sprayed 8"square pan

  2. Slice ends off washed, unpeeled zucchini.

  3. Slice tomatoes in 1/4" rounds.

  4. Alternate rows of zucchini and tomatoes.

  5. I seasoned with garlic and onion powder. Also Italian Seasonings and pepper . I just sprinkled the seasonings over the vegetables.

  6. Put bread in a food processor and process until consistency wanted. I added about 1/2 Tablespoon of EVOO. and continue processing until well blended.

  7. Sprinkle crumbs over the vegetables.

  8. Bake at 425 degrees about 35 minutes or until crisp tender.
