Margarita Fruit Coupe

Oh Yeah!! This has tequila in it. It was way to strong for me so I had to dilute it . But again when it comes to liquor it doesn't take too much to be way to much for me. I wanted to have some church friends in for a birthday party.and serve this. Oh boy they may have waaaay to much fun..
After diluting it I thought it was really good. Plus I added more fruits to the recipe.

Ingredients:
  • 2- 1/2 Tablespoons silver tequila-I will cut it back to 2 Tablespoons next time
  • 2-1/2 Tablespoons sugar-I used raw agave nectar
  • 1 Tablespoons key lime juice-I used 1 1/2 Tablespoons
  • 1-1/2 Tablespoons frozen orange juice concentrate thawed-don't dilute-I use 3 tablespoons
  • Pinch of salt-I did not use
  • 1- 1 lb. mango peeled and diced
  • 2 Fuyu persimmons, peeled and cut into chunks-I did not use cause I could not find them in the stores
  • 3 kiwi fruit peeled and diced 
  • 1/4  fresh pineapple, peeled and diced-I use more like 1/3 to 1/2 of a pineapple
  • I also added some cutie oranges, separated and diced-about 5
Directions:
  1. Whisk together first 5 ingredients.
  2. Pour over fruit and mix.
  3. Refrigerate at least 1 hour before serving.
  4. The recipe suggested dipping the glasses in the fruit juice and then dip in salt. I did not do this.

Enjoy, but not too much!!!

Health Tips for Acid Reflux


As we age, our stomach acid production declines.  Stomach acid is necessary for digestion.

Most indigestion symptoms occur when stomach acid refluxes (squirts) back up into the esophagus. This causes it to burn.  As a result, people often take antacids, which does stop the burning. Instead of giving your body what it needs to heal though, it just blocks the production of stomach acid, rather than healing the body.

Unfortunately, using antacid medications such as Prilosec, Nexium, Zantac and other antacids for an extended period causes a number of problems. First of all, with no stomach acid your body is not able to optimally digest food and you become nutritionally deficient. This makes it even harder for your stomach to make the mucous lining it needs to protect itself and can set you up for even more reflux. Secondly, in your body's attempt to make stomach acid when you take meds, it makes huge amounts of a hormone called gastrin to stimulates stomach acid production. Because of this, as soon as you stop your antacids, the stomach makes massive amounts of acid-- which it cannot protect against. And you become addicted to the antacids.

If you have indigestion or acid reflux, I highly recommend that you do things that are healing rather than taking antacids. Here are some things you can do right away:
  1. Improve your digestion by taking enzymes such as Ness Formula #4 and #16.
  2. Take DGL (deglycyrrhizinated licorice) 380 mg; chew 2 tablets 20 minutes before your meal.  The DGL form of licorice extract can be safely used by itself to alleviate symptoms of acid reflux. Deglycyrrhizinated licorice is made from licorice from which the glycyrrhizin (the substance that affects blood pressure) has been removed.
  3. Mastic gum.  Some research suggests that it can help reduce inflammation in the gastrointestinal tract. For this reason, it’s used in supplements for heartburn, usually in combination with DGL.
  4. Heartburn Free Enzymatic Therapy - take 1 every other day for 20 days; it may initially aggravate reflux, but can give long term relief.

Mood Mender

Fennel juice aids digestion and relieves gas.


3 fennel stalks; include leaves and flowers
3 carrots, scrubbed well, tops removed, ends trimmed
2 stalks celery
1/2 pear
1/2 inch chunk ginger root, scrubbed or peeled if old

Cut produce to fit your juicer’s feed tube.  Juice ingredients and stir.  Pour into a glass and drink as soon as possible.
Serves 1-2

Vicki’s Floaters Are Gone!

I woke up this morning and noticed my floaters are gone.  It was weird. I just said to myself, hmmm they are gone.  I have looked at the ceiling--no floaters. Looked at light--no floaters. Then the true test. I ran outside into the sunshine and NO floaters.  I was shocked.  I have been juicing every day, but confess I am not taking the supplements [you recommended] like I should. I am still a work in progress.  Wow, really cool.  My typical juice drink includes granny smith apples, red apples, carrots, cucumber, celery, spinach, ginger, parsley, pressed cranberry juice, lemons, limes, frozen strawberries (when fresh are not available) and frozen blueberries (fresh are too expensive), and sometimes a tomato and a beet.  How cool is this!  I have been working towards Cherie's detox programs and plan to start the cleanse this week.  I have been diligently juicing, but want to detox now since I have had a roller coaster of tiredness, muscle weakness and fatigue. Overnight Almond Joy Oats

Do you like Almond Joy Candy Bars!!!  Well we should not be eating those anymore. How about trying this recipe. If you like Almond Joy Candy Bars you will love this recipe.
 Roxanne gave me this recipe last year and I just never got around to making it. I had it every day for breakfast this week and it is really yummy!! You may want to double the recipe.
Ingredients:
  • 1/3 cups rolled oats
  • 1 Tablespoons Chia Seeds-or flax seeds or both
  • 1 Tablespoons vegan chocolate powder
  • 2 Tablespoons unsweetened coconut 
  • 2 Medjool Dates-pitted and chopped-this is a sweetener
  • 2/3 cup almond milk
  • 1/4 teaspoon Almond Extract
  • I also added a scoop of protein powder that I had
Optional:
  1. Add slivered or chopped  almonds and dark vegan chocolate chips-I did not do.
  2. Put all the ingredients in a bowl and mix well.
  3. Refrigerate and enjoy the next morning.

How to Get Rid of Floaters in the Eyes

People often ask me if there is anything they can do about eye floaters.  Many times they have been told there is no hope for this condition.  This is not true.  I once had so many floaters that on a sunny day the various shapes floating by reminded me of a star-studded night.  I have totally cured myself. I haven't seen even one in a number of years.  But, I don't know how long it took me to get rid of them.  I just realized one day when looking into the sun, that they were all gone. Here’s what you can do to improve your eye health:

Antioxidants
Eating foods and drinking juices rich in antioxidants is a good home remedy for floaters. Foods rich in vitamin C, beta-carotene, and E are the best sources of antioxidants. Juice carrots, dark leafy greens, lemon, all other brightly colored vegetables.  Drink about 1 quart of juice per day.

Omega 3 Fatty Acids:
Hemp oil is believed to be one of the best home remedies for floaters. It is a rich source of omega 3 fatty acids, which have protective properties against retinal diseases.  Omega 3 fatty acids are also found in fish, fish oil, walnuts and wheat germ.

Serrapeptase Enzyme
Serrapeptase enzyme is an effective natural cure for eye floaters. It digests the debris, blood clots and dead tissues that cause the floaters.

Recipe of the Week

Berry Bright Eyes

Berries are very rich in antioxidants that help fight degenerative eye disorders. They also help improve vision. You can also help prevent eye disorders by avoiding sugar. Eating too much sugar promotes swelling of the lenses and increases the risk of free-radical damage to the eyes.

1 Wild Berry Zinger herbal tea bag
1/2 cup blackberries, fresh or thawed if frozen
1/2 cup blueberries, fresh or thawed if frozen
1 handful of spinach
1 dark green lettuce leaf
1/4 tsp. pure raspberry extract

Steep one bag of Wild Berry Zinger herbal tea in a cup of hot water for about twenty minutes, or until the tea is strong and flavorful. Set aside to cool. Turn off the juicer and pour in the berries. Turn the machine back on and juice the berries. Then wrap spinach in the lettuce leaf and push through the juicer slowly. Juice all remaining ingredients and combine with herbal tea and raspberry extract. Stir and serve as soon as possible.

Serves 1–2.

Trigo Tacos

Last weekend my daughter and I went to Chicago for a "healthy" cooking class. On the way down we made a few stops in Milwaukee. One of the places we stopped was Beans & Barley  Restaurant on 1901 E North St. I would highly recommend this place if you are ever in Milwaukee.
 I decided to have the Trigo Taco. It was absolutely excellent. They gave me the recipe, but it served a large amount of people, so I had to cut the recipe down. Here goes.

This will make 12 tacos. Use soft tacos
  • Cook 1 cup Bulgar in 1 1/2 cups low sodium vegetable broth.
 While Bulgar is cooking, Saute the Following:
  • 1 cup onions,, diced small
  • 1 cup tomatoes, diced small
  • 1/2 cup green pepper, diced small
  • 1/2 cup red pepper, diced small
  • Add 1 1/2 teaspoon garlic powder
  • 1 Tablespoon tomato paste
  • 1/2 tablespoon salt-go easy-I did not add that much
  • 1/4 cup Mexican Spice-I went on line to find out what was in Mexican Spice and made my own mixture
  1. Cook for several minutes blending flavors.
  2. When Bulgar is cooked add to vegetable mixture.
  3.  At this point I added more broth-Not sure of the amount, but probably 1/2  cup or so more. You want a nice taco consistency.
Add seasonings to taste.

Make your own Mexican Spice:
  • 1/2 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 tablespoon coriander
  • 1 tablespoon paprika 
  • 1 tablespoon oregano 
  • 1/2 teaspoon garlic powder
  • Use 1/4 cup of this in the recipe.

Garnish:
  • 3 cups red cabbage finely sliced.
  • 3 cups green cabbage finely sliced.

Sauce:
I changed this part considerably.

  • 12 oz. sour cream of choice-I use low sodium with 15 milligrams sodium.
  • 1-2 teaspoons lime zest-the recipe did not call for it-but it was really good in there.
  • 1/2 tablespoons lime juice.
  • 1 teaspoon Mrs. Dashes Southwestern Chipolte Seasoning.
  • 1 teaspoon onion powder
  • 1/4 teaspoon salt-I did not use.
  • 1/4 cup cilantro chopped fine-I use 1 teaspoon dried cilantro.
Mix together.

Directions:
  1. Warm the soft tacos.
  2.  Put the  Bulgar mixture on the taco. 
  3. Garnish with  raw cabbage.
  4. Add the sour cream mixture.
  5. Serve immediately.

Deans Tomato Bisque

My son Dean made this at one of our cooking classes.. My 2 college granddaughters where at my home for lunch yesterday and this is one of the things I made. It is their dads recipe so I knew it would be a hit.

Ingredients:
  • 8 cups tomatoes, chopped-I used my canned tomatoes.
  • 3 cloves of garlic crushed-I used more
  • 1/4 cup water.
  1. Put in large kettle. Cook at low boil for an hour.
In another pan put in:
  •  1 medium onion, chopped
  • 2-3 stalks celery, chopped.
  1. Saute for about 5-8 minutes.
  2. Add 3 tablespoons flour stirring about 3-5 minutes.
  3. Whisk into tomatoes stirring constantly , 2-3 minutes.
  • Add 3/4 cup or so of rice milk.
  • 3/4 teaspoon Himilayan salt.
  • 1 tablespoon sweetener of choice.
  • Mrs. Dashes Southwestern Chipolte Seasonings. to taste.
  • Freshly ground  black pepper to taste.
  • Blend well with a submersible blender-or blender.
  • Remove seeds if so desired. I did not.
  • Serve hot,  sprinkled with lots of fresh chopped basil..
Remember soup is always better the second day.

Philly Style Broccoli, Provolone and Portabella Sandwich

I had 2 college grandchildren for lunch today. I made this really healthy sandwich, but let the girls put on their own cheese. They LOVE cheese. I found this recipe in the January/February Vegetarian Times Magazine. Of course I tweaked it some. If the Chippers from this class want to make this, that is great after the 2nd day of the7 day Jump Start. But please no cheese OK.
I let my grandgirls have as much cheese as they want as I want them to come back again. This is sooooooo
very good. Give it a try I think you will love it.
I bought a baguette at Breadsmith, and sliced it into 3 long pieces. I cut  the top off so it would lay flat.
I am giving you the recipe the way I made it.

Directions:
  1. Steam 2 lbs broccoli  for 1 1/2-2 minutes that has been cut into bite size pieces. Drain
  2. Put in a medium size kettle.
  3. Add 1 cup roasted red peppers cut into bite size pieces.
  4. 1 teaspoon or so of Mrs Dashes Southwestern Chipolte seasoning-or to taste.
  5. 1/2 teaspoon garlic powder or to taste.
  6. Saute for a few minutes. do not over cook.

  1. In another kettle saute 6-8 green onions,chopped..
  2. 4 large portabella mushrooms sliced.( not chopped)
  3. 1 1/2 Tablespoon Balsamic Vinegar. I used Raspberry Balsamic Vinegar from Olive Cellar.
  4. Toast slices of baguette under the broiler-I spread the bread lightly with Earth Balance Spread. Use the red container please.. you can find it at Woodman's and Festival Foods.
  5. Cover with the broccoli mixture and then the mushroom mixture.
  6. Broil until heated through.
  7. Remove from broiler and top with cheese. I used provolone.
  8. Return to broiler until melted. I had very little cheese on mine and it is wonderful.

Double the recipe and refrigerate for a quick put together sandwich after a hard days work.

Roasted Sweet Potato Chips

These are really good, and very easy to make.

Ingredients:
  • 1 sweet potato with peel on, sliced very thin
  • Put sliced sweet potato in plastic bag with a tablespoon or so of EVOO. Go easy.
  • Add a little onion powder, garlic powder, Mrs. Dashes Southwest Chipolte Seasoning  and a dash of black pepper.
Directions:
  1. Shake the bag really well and put on a parchment lined baking sheet.
  2. Bake at 425 degrees until tender 20-25 minutes
  3. Turn on the broiler and broil until golden brown. Flip and do the other side of sweet potatoes.
  4. Sprinkle with cheese of choice, put back under the broiler until cheese is melted.
  5. Serve immediately.
Enjoy!!

Red Curry Vegetable Soup



 I found the recipe in the January/February Vegetarian Times Magazine. It is a really nice soup for the winter..

Ingredients:
  • 12 oz. cauliflower cut into small pieces to equal 3 cups
  • 3-4 green onions, thinly sliced-use the green parts also
  • 2 Tablespoon Red Curry Paste-Please start out with a light 1 tablespoon as this is spicy. You can always add more.
  • 4 cups low sodium vegetable broth
  • 15 oz can petite diced tomatoes in its own juice
  • 3/4 cup light coconut milk-I used the entire can
  • 6 oz. green beans cut into 1" pieces-1 1/2 cups-I used more
  • 1 Tablespoons lime juice

Directions:
  1. Saute cauliflower and the white part of the green onions for about 5 minutes until vegetables begin to brown.
  2. Add curry paste and saute one more minute.
  3. Add broth and tomatoes, bring to a boil.
  4. Lower heat and simmer about 10 minutes.
  5. Add coconut milk and green beans and simmer 5 more minutes until beans are tender.
  6. Stir in lime juice and the remaining green onions.
  7. Season to taste. Add more curry paste if desired.

Acts of Kindness Can Make You Happier & Healthier

Sonja Lyubomirsky, a professor of psychology at the University of California, Riverside, has studied happiness for more than 20 years. She has found that positive activities and acts of kindness can boost positive emotions, thoughts, and behavior, in turn improving well-being. (US News, Jan. 24, 2013)

David Hamilton, Ph.D. has identified five positive effects of kindness:

1. Kindness Makes Us Happier
Dr. Hamilton found that when we do something kind for someone else, we not only feel good, we tap into something deep and profound inside of us that says, ‘This is who I am.’ Biochemically, levels of the brain’s natural versions of morphine and heroin, which we know as endogenous opioids, are increased. They cause elevated levels of dopamine in the brain and so we get a natural high, often referred to as ‘Helper’s High.’
2. Kindness Gives Us Healthier Hearts
Acts of kindness are often accompanied by emotional warmth, which produces the hormone, oxytocin in the brain and throughout the body. It plays a significant role in cardiovascular system health, causing the release of a chemical called nitric oxide which dilates (expands) the blood vessels. This reduces blood pressure.
3. Kindness Slows Aging
Two culprits that speed the aging process are free radicals and Inflammation--both result from making unhealthy lifestyle choices. Remarkable research shows that oxytocin reduces levels of free radicals and inflammation and slows aging at the root level. Also free radicals and inflammation play a major role in heart disease so this is also another reason why kindness is good for the heart. There have also been references in scientific journals regarding the strong link between compassion and the activity of the vagus nerve. The vagus nerve, as well as regulating heart rate, also controls inflammation levels in the body.
4. Kindness Improves Relationships
Kindness reduces the emotional distance between people causing us to feel more ‘bonded. ’It’s something that is so strong in us that it affects us at the genetic level. We are wired for kindness. The stronger the emotional bonds within groups, the greater the chances of survival and so ‘kindness genes’ were etched into the human genome. When we are kind to each other, we feel a connection and new relationships are forged, or existing ones are strengthened.
5. Kindness is Contagious
When we’re kind we inspire others to be kind. Studies show that it actually creates a ripple effect that spreads outwards to our friends and beyond– to “3-degrees of separation.” Just as a pebble creates waves when it is dropped in a pond, so acts of kindness ripple outwards touching others’ lives and inspiring kindness everywhere the wave goes.

When A. J.  Star met Alabama QB AJ McCarron, his life changed forever---from despair to belonging and purpose. Through one act of kindness by McCarron, a disabled young man’s life was forever changed.  I encourage you to watch this short video.  I think it will inspire you, as it did me.  We are indeed “our brother’s keeper.”  It may take us out of our way a bit or cost us a little time and effort.  This is what life is all about--loving others.

Recipe of the Week
Happy-Mood Morning

Fennel juice has been used as a traditional tonic to help the body release endorphins, the “feel-good” peptides, from the brain into the bloodstream. Endorphins help to diminish anxiety and fear, and they generate a mood of euphoria.

1/2 apple (green is lower in sugar)
4–5 carrots, well scrubbed, green tops removed, ends trimmed
3 fennel stalks with leaves and flowers
1/2 cucumber, peeled if not organic
1 handful of spinach

1-inch-chunk ginger root

Cut produce to fit your juicer’s feed tube. Juice apple first and follow with other ingredients. Stir and pour into a glass; drink as soon as possible. Serves 1–2.
