This granola recipe won a blue ribbon at the San Juan County Fair. Also great as a snack or trail mix.
Ingredients:
- 4 cups of steel cut oats
- 3 cups of instant oatmeal
- 1/2 cup light olive oil
- 1/4-1/2 teaspoon sea salt
- 1/2 cup whole almonds
- 1/2 cup almonds
- 1/2 cup pecans
- 1/2 cup walnuts
- 1/2 cup cashews
- 1/2 cup pepitas-raw pumpkin seeds
- 1/2 cup sesame seeds
- 1/2 cup flax sees meal
- 1/2 cup millet
- 1/2 cup oat bran
- 1/2 cup unsweetened coconut
- 1/2 cup raw sunflower seeds
- 1/2-3/4 cup honey or agave nectar
- 1 Tablespoon vanilla-not imitation please
- 2 teaspoons ground cinnamon
- If you do not have all the nuts called for use what you have. Just make sure the total amount does not change to much.
Directions:
- Preheat oven to 300 degrees
- Stir all ingredients together in a large bowl. Season to taste. You will want to have some clumps remaining.
- Spread on 2 large baking sheets lined with parchment paper and sprayed with non-fat cooking spray.
- Bake for 45 minutes, stirring every 15 minutes.
- Remove from oven and let sit on sheets, stirring periodically. Granola will continue to cook on sheets.
- When completely cool, store in airtight containers.
