- I-sweet potato with peel on, sliced thin (see picture),
- Put sliced sweet potatoe in a plastic grocery bag with a Tablespoon or so of EVOO.
- Add a little onion and garlic powder and some Mrs. Dashes Southwest Chipolte Seasoning. Also a touch of black pepper.
- Shake the bag well and put on a parchment lined baking sheet.
- Bake at 425 degrees until tender--20-25 minuates.
- Then turn on the broiler and broil until golden brown,
- Sprinkle with vegan cheese or cheese of choice.
- Broil until cheese is melted.
- Serve immedietly.
Next time I would put the sweet potatoes on a rack before baking so the bottoms of the sweet potato would get crisper.
