Roasted Sweet Potatoes

  1. I-sweet potato with peel on, sliced thin (see picture),
  2. Put sliced sweet potatoe in a plastic grocery bag with a Tablespoon or so of EVOO.
  3. Add a little onion and garlic powder and some Mrs. Dashes Southwest Chipolte Seasoning. Also a touch of black pepper.
  4. Shake the bag well and put on a parchment lined baking sheet.
  5. Bake at 425 degrees until tender--20-25 minuates.
  6. Then turn on the broiler and broil until golden brown,
  7. Sprinkle with vegan cheese or cheese of choice.
  8. Broil until  cheese is melted.
  9. Serve immedietly.
Tips from Verna's Test Kitchen:

Next time I would put the sweet potatoes on a rack before baking so the bottoms of the sweet potato would get crisper.
