Ingredients:
- 5 cups broccoli
- 2 Tablespoons almond, chopped-I used quite a bit more.
- 2- 11 oz cans mandarin oranges, well drained-I used 1 can of mandarin oranges and cut the pieces in half.
- 1 orange, zested and juiced
- 5 green onions chopped
- 3 Tablespoons white vinegar-I used 1 1/2 Tablespoons cider vinegar.
- 1 Tablespoon sugar-I used 2 Tablespoons honey.
- 1 Tablespoon oil-not necessary.
Directions:
- Steam broccoli in covered saucepan for 3 minutes.
- Remove quickly and rinse with cold water to stop cooking.
- Place in a serving bowl, cover and refrigerate.
- Meanwhile in a medium sized bowl, combine the rest of the ingredients.
- Toss gently and let stand at room temperature 15-30 minutes to marinate flavors.
- When ready to serve pour marinate over the broccoli and toss very gently.
