Ingredients:
- 1 can black beans, drained and rinsed
- 3 Roma tomatoes, diced, or 1 can diced tomatoes
- 10 oz frozen corn
- 1 small red onion, diced
- 1 bell pepper (red, yellow or green) diced
- 1 jalapeno pepper, seeded and micro diced
- 1 cup fresh cilantro, chopped
- 1 can black olives, sliced optional
- salt-use sparingly
- Freshly ground black pepper to taste
- Juice of 1-2 limes
- 1 tablespoon olive oil or to taste
- 1 tablespoon Vinegar or to taste
- Mix gently and chill overnight.
- Serve with tortilla chips-scoops work best.
