Tomato and Corn Saute



Ingredients:


  • 1 1/2 cups fresh sweet corn

  • 1/2 cups diced shallots

  • 1/2 green pepper-diced

  • 2 cups tomatoes-diced

  • 1 Tablespoon fresh basil

Directions:


  1. Cook corn, green pepper and shallots in a small amount of oil until lightly browned.

  2. Cool -add tomatoes and fresh basil-I used parsley which was OK, but basil would be so much better.

  3. Refrigerate.
