Ingredients:
- 1 1/2 cups fresh sweet corn
- 1/2 cups diced shallots
- 1/2 green pepper-diced
- 2 cups tomatoes-diced
- 1 Tablespoon fresh basil
Directions:
- Cook corn, green pepper and shallots in a small amount of oil until lightly browned.
- Cool -add tomatoes and fresh basil-I used parsley which was OK, but basil would be so much better.
- Refrigerate.
