Ingredients:
- 1 1/2 cups wild rice uncooked
- 4 1/2 cups water
- 1 cup dried cranberries
- 3 apples-washed, cored and chopped
- 2 large pears, cored and chopped
- 1/2 cup toasted slivered almonds
- 3 1/2 Tablespoons frozen apple concentrate
- 1 Tablespoon agave Nectar
- 1 teaspoon cinnamon-I used a whisker more
- 1/2 teaspoon ground nutmeg-I grated it fresh
- 1/2 teaspoon allspice
- 1/2 teaspoon cardamon-go easy can always add more
- 1 teaspoon freshly ground black pepper or to taste
- 1 fresh mango is wonderful in this recipe-optional
Directions:
- Cook rice in water until all water is evaporated.
- Soak dried fruit in sherry for 30 minutes-I used a small bottle of chardonnay.
- Saute all fresh fruit, plus almonds for about 2 minutes.
- Add apple concentrate continue cooking 1-2 minutes
- Add spices, cooked rice and black pepper to taste.
- Mix well.
This is really very good.
