Ingredients:
- 1 & 1/2 cups all-purpose flour, sifted.
- (I probably would have use some WW pastry flour in this recipe.VV)-
- 3/4 cup sugar-(again I probably would use some Truvia in place of sugar.VV)
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/4 cup unsweetened cocoa powder-sifted
- 1 &1/2 teaspoon vanilla-please no imitation.
- 1/3 cup olive oil-( remember unsweetened applesauce would be great here. VV)
- 1 Tablespoon white distilled vinegar
- 1 cup cold water
- Heat oven to 350 degrees.
- Prepare cupcake pans with cupcake liners.
- Combine the dry ingredients.
- Add the vanilla, oil, vinegar, and water and stirred until just combined.
- Bake for 15 minutes, or until a toothpick comes out clean.
- Allow to cool completely before frosting.
- Chocolate Frosting:
- 1-3 cup Earth Balance or any other non-dairy butter.
- 2 cups confection's sugar--this comes vegan also
- 1/4 cup cocoa powder-sifted
- 2/3 teaspoon vanilla extract
- 2-3 tablespoons water or non-dairy milk(add more if needed)
