I am posting two recipes for Oven Baked Oatmeal. They are both excellent.
The second recipe came from my special friend Kathleen!!
Ingredients:
- 1 1/2 cup quick cooking oatmeal
- 2 tablespoons Agave Nectar
- 1/2 cup diced cranberries
- 1/2 cup walnuts-chopped
- 1/2 teaspoon cinnamon
- 1/2 teaspoon almond or maple extract
- 1 teaspoon vanilla
- 2 cups soy milk (Almond Milk would be great with Almond Extract)
- 1 cup water
Directions:
- Mix all ingredients together.
- Put in greased 8 by 8 glass pan.
- Bake 350-about 40 minutes
I enjoyed this much more the second and third day after flavors mellowed.
2nd recipe for Oven Baked Oatmeal
Ingredients:
- 2 cups old fashioned oatmeal
- 4 cups of non dairy milk of choice
- 1/2 teaspoon Almond Extract
- 1/2 teaspoon Cinnamon
- 2 Tablespoons Agave Nectar
- 1/2-1 cups alonds-chopped or sliced
- 1/2 cup dried cranberries
- 1 large unpeeled apple-grated
Directions:
- Mix all ingredients together.
- Pour in greased 9 by 13 inch glass pan.
- Bake at 375-45 minutes
Also very good.

I've tried this 2nd recipe and put the almonds on top for a nice crunch. very good.
