Coconut Macaroons


Recipe:

Coconut Macaroons, are just one of my very favorite cookies. I found this recipe on http://www.christinacooks.com/ They turned out really great, and best of all they where so easy to make.

Coconut Macaroons
2 1/3 cups unsweetened shredded coconut
1/3 cup whole wheat pastry flour
1/2 teaspoon baking powder
1 pinch sea salt
1/3 cup brown rice syrup
1/2 teaspoon pure almond extract
2/3 cup almond milk
Chocolate glaze

1/2 cup non-dairy chocolate chips
3 Tablespoons almond milk
2 teaspoons brown rice syrup
Directions:
  1. Preheat oven to 400 degrees. Line 2 baking sheets with parchment paper.
  2. Combine all the ingredients, mixing well.
  3. Set aside for about 5 min, so that the coconut can absorb all the liquid.
  4. Form dough into small balls, (about a tsp full) and put on parchment paper.
  5. Bake about 20 minutes, or until cookies start to brown.
  6. Transfer to wire rack to cool.
  7. Place the chocolate chips in a heat resistant bowl.
  8. Combine the almond milk and rice syrup in a small saucepan and bring to a full boil.
  9. Pour over the chocolate and whisk until smooth.
  10. Transfer to a glass measure cup with spout.
  11. Drizzle the cookies with the glaze. ( I didn't drizzle, I just spread the glaze on with a knife.)
  12. allow to stand a few minutes to set the glaze.
Most recipes I change quite a bit. This one I felt was great just the way it is.
