Ingredients:
- 1 1/4 cups whole wheat pastry flour
- 1/4 cup unsweetened cocoa
- 1 1/4 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
1 teaspoon cinnamon - 1 whole banana mashed
- 1/2 cup raw sugar-I would use 1/2 teaspoon Stevia
- 1/2 cup unsweetened applesauce
- 1/4 cup non-dairy milk
- 1 teaspoon vanilla extract-no imitation please
- 1 cup shredded zucchini
- 1/2-3/4 cup walnuts-chopped
- Directions:
Preheat oven to 350 degrees. - Spray muffin tins-I like using the smaller tins
- Whisk together flour, cocoa, baking powder, baking soda,salt and cinnamon.
- In another bowl cream together mashed banana and applesauce and sugar of choice.
- Add soymilk, vanilla, zucchini and nuts.
- Stir until evenly combined. Add flour mix to wet mix in 3-4 bathes and stir until just combined.
- Spoon into sprayed muffin tins, bake 18-25 minutes or until a toothpick inserted in the middle comes out clean.
